The roasting process can produce compounds associated with familiar coffee characteristics such as caramel, chocolate, nuttiness, fruit, floral notes, spice, and roasted aromas. How those compounds develop depends on the coffee itself and how it is roasted.

Here's the important part: many of the compounds responsible for coffee's aroma are volatile. Once coffee has been roasted, its aroma profile continues to change during storage.

Studies have found that storage can reduce aroma intensity and freshness while increasing less desirable sensory characteristics. Research on roasted coffee has also shown that packaging and storage conditions influence how quickly those changes occur.
