Gabriel Mathiew de Clieu, a French Naval Officer, played the vital role in the history of Mexican coffee. He managed to acquire a descendant of a coffee tree given to King Louis XIV of France, and he made it his duty to take the tree to his estate on Martinique. During the voyage, the miraculous tree survived Tunisian pirates, violent storms, dangerously covetous passengers, and not to mention, a deficit of fresh water. However, it arrived safely in Martinique where it flourished.

This high-grown, Mexican coffee is found in the region of Oaxaca. After harvesting, the coffee beans are wet-processed embodying nutty undertones of the soil. We roast the beans to medium-light which produces a medium-bodied coffee that is winy with slight tones of chocolate and a light acidity.

acceptable coffee but not my favorite

I drink coffee black and freshly grind the beans before I brew a cup. . My favorite coffee is Bali Blue Moon, I order it the most but also have a few others that I will order a second or third time especially if it is on special. I also will try new coffees as I did with this one. I liked that it was low acidity but for me it was a little bit on the bland side and I didn't really taste the chocolate tones the way I do with Bali Blue Moon.

Who likes Wine and Chocolate?

Now I get the reason behind the name"Spirit of the Aztec". Opening this bag, the aroma surrounded me nourishing my soul. This Mexican coffee has a powerful scent that gets the palette ready for the most incredible experience in a cup. The first sip, I noticed the chocolate note. The wine flavor, second in command, which was dominant as an aroma, had a polite settlement in taste. I owe it all to the farmers that cultivate the trees from elevations above 3500 ft, allowing it to produce such an unconvincing bean. Adding to that, the Coffee am roaster's ability to create a low acidic, silky, smooth, medium balance. Enjoy!
