White Tea
Fairly new to mainstream America, but enjoyed in China since the Ming dynasty, you may not be familiar with White Tea. White tea is not tea with milk...it is a completely different form of tea altogether and the production of white tea is different from any other tea you've had. The leaves come from special varietals tea bushes and are not processed, but are dried and withered in the sun. Because they haven't been processed and are so close to their natural state, they carry more powerful antioxidants such as polyphenols, than any other tea! These polyphenols are known to kill cancer causing cells, and retard growth bacteria such as staphylococcus, strep, and pneumonia.

White tea is also rich in fluoride and will help prevent dental plaque, the chief cause of tooth decay. The anti-viral and anti-bacterial effects of white are even greater than the popular Green tea. Milton Schiffenbauer, PhD, a microbiologist and professor at Pace University made this powerful statement, "Past studies have shown that green tea stimulates the immune system to fight disease. To make an exceptional cup of white tea, start with 2 teaspoons of loose-leaf tea per 8oz of fresh water. Bring your water to a rolling boil, remove from heat and wait 1 minute before adding the leaves to steep. You should steep for 5-8 minutes.

White tea has finally caught the attention of chefs and the medical community in Northern America, but has been used in food and for medicinal purposes for centuries in Asia. This tea has a divine history, an exceptional flavor and magnificent health benefits.
