This high-grown, Mexican coffee is found in the region of Oaxaca. After harvesting, the coffee beans are decaffeinated and wet-processed embodying nutty undertones of the soil. We medium roast the beans to produce a light bodied, decaf coffee that is winy with slight tones of chocolate and a light acidity.

We have been so spoiled to find a decaf coffee like "Spirit" with little acidity and great flavor. This site quit selling it for a while and we were so disappointed...glad it is back.

A plesant surprise

I was hesitant to try this coffee having had it from a local roaster and not being very impressed. The coffee was very bland. However, given my satisfaction with the CoffeeAM beans, I gave it a try. I was surprised. This is a nice cup of coffee with a medium body, a mild aftertaste that is slightly nutty to carbony, and mild acidity. Now, that said and recognizing taste is very subjective, let me put this into context. I prefer my coffee black and on the strong side. I use a Bunn coffee maker, grind the beans just before using, use 20 ounces of water, and three level measures of bean. I usually warn my house guests before serving. With this coffee, I went to 4 measures of fresh ground bean to the 20 ounces of water and got a taste much more to my liking. Either way this coffee has a pleasing distinct taste. This is one I would order again.

Taste is close to Jamaican Blue Mountain Coffee but Decaf

I've been a big fan of Jamaican Blue Mountain Coffee and Maui Peaberry Coffee ever since I first had them in the early '80's in Washington, DC. I do not know which of the two I enjoyed better. About 10 years ago, I had to cut back on my intake of caffeine and with that I thought I would never get to have another great cup of coffee. By accident I discovered Coffee AM's Decaf Mexico 'Spirit of the Aztec' Coffee. Was I ever impressed!!! Spirit of the Aztec Coffee has a rich taste, mild to full body, very little acid so it has a lack of any bitterness with a mild, smooth finish. It is chocolatey sweet and with a nice almond croissant with raspberry preserves is perfect for those lazy Sunday breakfasts.
Pros:
Rich taste, mild to full body, very little acid, no bitterness, no bitter after taste, smooth finish, sweet, and chocolatey.
Cons:
Geez I have to get up to brew it... yes, it makes you lazy.
