I love this coffee. Small beans with a full and smooth aroma. Just smelling the coffee after grinding is a pleasure. It's creamy and gentle, Something to drink with someone you love.

My impression of this coffee, by itself, is that it is somewhat on the light side. I prefer a bolder Ethiopian. In the order for this 5lb bag, I also ordered the 5lb Ethiopia Yirgacheffe Coffee, beans. This bean has been my preferential mainstay for a number of years. My reason for obtaining the Organic Sidamo Fair-Trade bean was my hope that it would match a long gone Sidamo bean from a major coffee retailer. This Organic Sidamo did not attain the flavor of what I recalled from the prior major bean. What I did, however, was mix 50% Organic Sidamo Fair-Trade with 50% Ethiopia Yirgacheffe Coffee bean. This combination, in my opinion, is superior to the plain Organic Sidamo Fair-Trade, the prior major retailer bean, and several other Ethiopian beans from a particular grocer in the Austin/Dallas/Houston area. The combination is, well, excellent, stellar, superior... probably the finest coffee flavor I have ever held. The combination has the fine, smooth, citris, with the unmistakable Sidamo/Yirgacheffe boldness. Hence, I give a 5-star rating, although, by itself, the Organic Ethiopia Sidamo Fair-Trade bean would receive only a 4-star rating. Two more fact-lets I'll mention on this particular bean... First, I specifically requested a slightly lighter roast that CoffeeAM would have normally roasted. This was due to a prior remark by a customer that thought the normal roast was bitter. I requested the lighter roast, based on that particular comment, as I was concerned about a bitter bean (even though Sidamo is specifically considered 'bolder'.) The other item I'll mention is that I use a 10-cup brew Melitta Mill-Brew maker. I normally use 5 scoops (using the provided scoop) of beans for a 10-cup brew. In an attempt to strengthen the SIdamo, I once tried a 6-scoop brew, and this did not appreciably increase the brew strength. Possibly I should have used a slightly longer grind time using 6-scoops, over the normal 5-scoops beans, and using the normal grind setting of 4 (out of 9 max grind time setting.) In all, I definitely will purchase this bean again, and will definitely mix it 50/50 with the Yirgacheffe bean provided by CoffeeAM.

Ethiopian Sidamo is our favorite coffee, but the current batch seems too darkly roasted even though it is supposed to be a medium roast. By brewing a little more weak than usual, the over-toasted flavor can be minimized, but it is at the cost of the sweet aftertaste we have loved in this variety before.

I do not care for this Ethiopia coffee. the beans are small and it tastes bitter, leaving an aftertaste. not my favorite coffee. but it is alright cut with my Colombian coffee, I just don't care for the Ethiopia coffee it by its self.
